Green Peas and Ricotta Pasta
Ingredients:
250 grams bacon bits
1 small onion (minced)
2 cloves garlic (minced)
Zest of 1 lemon
Juice of 1 lemon
1/4 cup green peas
1/4 cup white wine
3 tbsp pasta water
2 tbsp fresh parsley (chopped)
1/4 tsp salt
1/2 tsp pepper
1/2 box of pasta
Directions:
1. Heat olive oil and sauté bacon bits for about 5 minutes in low fire. |
2. Caramelise the onions by cooking for about 2 minutes. |
3. Add the garlic and cook until golden brown. |
4. Add white wine and pasta water. Let reduce for about 5 minutes. |
5. Add lemon zest. |
6. Add the green peas. |
7. Add salt and pepper. Cook for 2 minutes. |
8. Add the cooked pasta of your choice (above: fusilli). |
9. Turn off the heat and add stir in the ricotta cheese. |
