Bread Crumbs: Ham and Cheese Crispy Pizza


Ham and Cheese Crispy Pizza

Ingredients:

Ham of your choice (I used breakfast ham)
Cheese of your choice (I used cheddar and feta)
Plain wraps
Sour cream (I used spinach and herb sour cream)
Salt and Pepper


Directions:

1. Place the toppings on the ham and cheese on the wrap.
2. Season with salt and pepper.
3. Heat in a normal toaster oven for about 4-5 minutes.
4. Top with sour cream.
5. Plate and Enjoy! :)

Sugar, Spice and Everything Nice: Mini Baked Oreo Cheesecakes


Mini Baked Oreo Cheesecakes

Ingredients:

1 bag or about 450g of crushed Oreo cookie pieces
3 tbsp butter (melted)
4 blocks of cream cheese (room temperature)
1/4 cup sour cream
1/2 cup sugar
1/2 tsp salt
1 tbsp vanilla extract
4 eggs
Mini Oreo cookies (optional)


Directions:

1. Preheat the oven at 180°C or 350°F.  Melt the butter in the microwave for a few seconds.

2. Pour the butter into the crushed Oreos.

3. Mix with a spatula until everything is coated with the butter.

4. Line your muffin tray with cupcake containers and place about 1 tbsp of the cookie crumbs on each cup.
You can also use just one springform pan if you prefer.
5. Press the cookie crumbs firmly to create the crust.  Bake for about 5-6 minutes then set aside to cool.

6. Add the sugar, salt and vanilla extract to the cream cheese.

7. Cream the mixture until light and fluffy (about 3 minutes).
My stand mixer gave up on me so I'm using a hand-mixer.

8. Add the eggs.

9. Whisk until well-combined.

10.  Add the sour cream.

11. Do one final whisking until the sour cream is mixed in.

12. Pour the cream cheese mixture on the baked cookie crust about 3/4 full.
You can use an ice cream scooper to do this.  Lightly shake and tap the tray to release any air pockets.

13. I'm not using a water bath for this recipe.  I just placed them in the oven for about 25 minutes.
Not bad at all, not a lot of cracks :)

14. Let rest in a cooling rack and top with mini-Oreo cookies.
Chill for at least an hour before serving.

Cluck Cluck: Chicken with Celery and Pickles

 Chicken with Celery and Pickles

Ingredients:

2 tbsp canola/ cooking oil
Chicken parts of your choice
1 medium onion (chopped)
1 tbsp garlic (minced)
3 stalks celery (chopped)
Salt and Pepper
150 grams sweet pickle relish
1/2 cup water
2 tbsp fresh parsley (chopped)
2 tbsp cream (optional)
3 tbsp cheddar cheese (optional)


Directions:

1. Heat the oil in the pan and sear the chicken.  Set aside.

2. In the same pan, sauté the onions and garlic.

3. Add the celery and cook for about 1 minute.

4. Season with salt and pepper.

5. Add the pickles.  Cook for another 1-2 minutes.

6. Add the water.  Ok, at this point, you can skip steps 7 and 8 and proceed to step 9.
I added gherkins brine instead of water and it tasted too sweet/ sour :p  I added the cream and cheese
just to help balance the flavours.  It turned out good though! :)

7. Add the cream.

8. Add the cheese.

9. Put the chicken back in the pan.  Let simmer for about 15-20 minutes until the chicken is cooked.

10. Add the parsley.
11. Taste and adjust seasoning as needed.

12. Plate and Enjoy! :)

Bread Crumbs: Baked Haloumi and Grilled Salami and Paprika Ham Sandwiches

 Baked Haloumi and Grilled Salami and Paprika Ham Sandwiches


Ingredients:

Butter
Bread of your choice
Haloumi cheese
Salt and Pepper
Cold cuts of your choice


Directions:

1. Season the haloumi with salt and pepper and bake for about 2 minutes and set aside.

2. Butter the bread and grill.  I just used normal white bread.

3. Grill until you get the golden brown colour.

4. Add the cold cuts from your favourite deli.

5. Assemble and top with the baked haloumi.

6. Serve with the side dish or condiment of your choice.
Plate and Enjoy! :)
