Mini Baked Oreo Cheesecakes
Ingredients:
1 bag or about 450g of crushed Oreo cookie pieces
3 tbsp butter (melted)
4 blocks of cream cheese (room temperature)
1/4 cup sour cream
1/2 cup sugar
1/2 tsp salt
1 tbsp vanilla extract
4 eggs
Mini Oreo cookies (optional)
Directions:
1. Preheat the oven at 180°C or 350°F. Melt the butter in the microwave for a few seconds. |
2. Pour the butter into the crushed Oreos. |
3. Mix with a spatula until everything is coated with the butter. |
4. Line your muffin tray with cupcake containers and place about 1 tbsp of the cookie crumbs on each cup. You can also use just one springform pan if you prefer. |

5. Press the cookie crumbs firmly to create the crust. Bake for about 5-6 minutes then set aside to cool. |
6. Add the sugar, salt and vanilla extract to the cream cheese. |

7. Cream the mixture until light and fluffy (about 3 minutes). My stand mixer gave up on me so I'm using a hand-mixer. |
8. Add the eggs. |

9. Whisk until well-combined. |
10. Add the sour cream. |

11. Do one final whisking until the sour cream is mixed in. |
12. Pour the cream cheese mixture on the baked cookie crust about 3/4 full. You can use an ice cream scooper to do this. Lightly shake and tap the tray to release any air pockets. |
13. I'm not using a water bath for this recipe. I just placed them in the oven for about 25 minutes. Not bad at all, not a lot of cracks :) |
14. Let rest in a cooling rack and top with mini-Oreo cookies. Chill for at least an hour before serving. Plate and Enjoy! :) |
