Oink Oink!: Chorizo Scrambled Eggs



Chorizo Scrambled Eggs

Ingredients:
1 tsp Olive oil
1 small Chorizo (sliced thinly)
2 Eggs (scrambled)
Salt and Pepper
Mozarella slices

Directions:
  1. In a heated pan, add the olive oil and heat up the chorizo pieces.
  2. Add the scrambled eggs and let set for about 2 minutes.
  3. Add the Mozarella cheese and cook for another 2 minutes.
  4. Season with salt and pepper.
  5. Serve with roasted tomatoes.
  6. Plate and Enjoy! :)
