Roots and Veggies: Basil Malunggay Pesto



    Basil Malunggay Pesto

Ingredients:

1/4 cup Olive oil (extra virgin)
1-2 cloves Garlic
1/2 cup Fresh Basil leaves (sweet)
1/2 cup Fresh Malunggay leaves
1/2 cup Cashew nuts
1/2 cup Pistachio nuts
2 tbsp Parmesan cheese (grated)
Salt and Pepper


Directions:
  1. Combine all ingredients in a blender.
  2. Blend until well combined.
  3. Taste and adjust the seasoning as needed. If the mixture is too thick, you can add more olive oil.
  4. Serve with toasted bread or cooked pasta.
  5. Plate and Enjoy! :)
