All About Pasta: Pansit Bihon


Pansit Bihon


Ingredients:

2 tbsp cooking oil
1 tbsp garlic
1 medium onion (chopped)
1/4 cup celery (chopped)
1 medium carrot (sliced into 1 inch slices)
1/2 cup cabbage (chopped)
500g bihon or rice noodles
1 Chinese sausage or Chorizo
1/2 cup shredded chicken breast (cooked)
8 pcs shrimp
1/4 cup soy sauce
1 cup water
1 tsp salt
1 tsp pepper
Calamansi or lime
Boiled egg (optional)


Directions:

Note: There are a lot of components to this dish so best to prepare your mise en place.

1. Sauté the garlic in cooking oil until golden brown.

2. Add the Chinese sausage and shredded chicken.  Stir and cook for a few seconds.

3. Add the shrimp.

4. Cook for about a minute on each side.

5. Remove and set aside.

6. Add the mirepoix (onions, celery and carrots) in the same pan and cook for about 3-4 minutes.

7. Add the salt and pepper.  Stir.

8. Add the noodles.

9. Mix together and cook for about 5 minutes.

10. Add the soy sauce and water.

11. Cook for about 8-10 minutes.  Stir occasionally.

12. Add back the chicken and sausage.  Stir.

13. Add the vegetables.
14. Cover and cook for about 5 minutes or until the snow peas are tender.  Taste and add more salt and pepper as needed.

15. Plate and Enjoy! :)
