Pansit Bihon
Ingredients:
2 tbsp cooking oil
1 tbsp garlic
1 medium onion (chopped)
1/4 cup celery (chopped)
1 medium carrot (sliced into 1 inch slices)
1/2 cup cabbage (chopped)
500g bihon or rice noodles
1 Chinese sausage or Chorizo
1/2 cup shredded chicken breast (cooked)
8 pcs shrimp
1/4 cup soy sauce
1 cup water
1 tsp salt
1 tsp pepper
Calamansi or lime
Boiled egg (optional)
Directions:
| Note: There are a lot of components to this dish so best to prepare your mise en place. |
| 1. Sauté the garlic in cooking oil until golden brown. |
| 2. Add the Chinese sausage and shredded chicken. Stir and cook for a few seconds. |
| 3. Add the shrimp. |
| 4. Cook for about a minute on each side. |
| 5. Remove and set aside. |
| 6. Add the mirepoix (onions, celery and carrots) in the same pan and cook for about 3-4 minutes. |
| 7. Add the salt and pepper. Stir. |
| 8. Add the noodles. |
| 9. Mix together and cook for about 5 minutes. |
| 10. Add the soy sauce and water. |
| 11. Cook for about 8-10 minutes. Stir occasionally. |
| 12. Add back the chicken and sausage. Stir. |
| 13. Add the vegetables. |
| 14. Cover and cook for about 5 minutes or until the snow peas are tender. Taste and add more salt and pepper as needed. |
