Arroz Caldo
Ingredients:
500g Chicken (marinate with salt and pepper)
1 1/2 Cups Glutinous Rice (Malagkit)
2 tbsp Ginger
2 tbsp Garlic
1 Medium Onion
1 tbsp Cooking oil
2 tbsp Spring onion or Chives (finely chopped)
1 tbsp Kasuba
Calamansi or Lime
1/4 tsp Salt
1/4 tsp Pepper
1 Egg (optional)
Directions:
1. Heat cooking oil and sear the chicken for about 2 minutes. I used a boneless chicken leg that I cut into 1 inch pieces. You can also use chicken wings or other chicken parts. |
2. Add the ginger and cook for about 2 minutes. |
3. Add the onions and cook until translucent. |
4. Add the garlic and cook for about 2 minutes. |
5. Add some chives or spring onion and 1 chicken bullion. |
6. Add the rice. Stir and let the rice absorb the juices from the chicken for about 1 minute. |
7. Add hot water and stir. Cover and let simmer for about 10 minutes. |
8. Stir every few minutes. |
9. Add the kasuba. |
10. Taste and add more salt and pepper if needed. Cover and cook for another 10 minutes or until rice is tender. |
11. Garnish with hardboiled egg, chives, fried garlic and lime. Plate and Enjoy! :) |
