Extra Rice, Please: Arroz Caldo


Arroz Caldo

Ingredients:

500g Chicken (marinate with salt and pepper)
1 1/2 Cups Glutinous Rice (Malagkit)
2 tbsp Ginger
2 tbsp Garlic
1 Medium Onion
1 tbsp Cooking oil
2 tbsp Spring onion or Chives (finely chopped)
1 tbsp Kasuba
Calamansi or Lime
1/4 tsp Salt
1/4 tsp Pepper
1 Egg (optional)


Directions:

1. Heat cooking oil and sear the chicken for about 2 minutes.  I used a boneless chicken leg that I cut into 1 inch pieces.
You can also use chicken wings or other chicken parts.

2. Add the ginger and cook for about 2 minutes.

3. Add the onions and cook until translucent.

4. Add the garlic and cook for about 2 minutes.

5. Add some chives or spring onion and 1 chicken bullion.

6. Add the rice.  Stir and let the rice absorb the juices from the chicken for about 1 minute.

7. Add hot water and stir.  Cover and let simmer for about 10 minutes.

8. Stir every few minutes.

9. Add the kasuba.

10. Taste and add more salt and pepper if needed.  Cover and cook for another 10 minutes or until rice is tender.

11. Garnish with hardboiled egg, chives, fried garlic and lime.  Plate and Enjoy! :)
