Seafood Masala Curry Linguine
Ingredients:
2 tbsp bacon bits
Assorted seafood of your choice (In this recipe: Fish fillet, Mussels, Shrimp, Squid, Scallops marinated in salt, pepper and lime juice)
Juice of 1 lemon/ lime
2 tbsp masala spice mix
1 tbsp garlic (minced)
1 small onion (chopped)
1 small box of coconut milk
1/4 cup water
1 tbsp fresh chives (chopped)
2 tbsp parmesan cheese (grated)
Salt & Pepper
Directions:
1. Sauté bacon bits for about 2 minutes. |
2. Set the bacon aside. Cook the fish fillet in the bacon fat for about 1-2 minutes on each side. |
3. Set aside. |
4. Sauté the scallops for about a minute on each side. |
5. Cook the shrimp and squid for 1-2 minutes. |
6. Set the cooked seafood aside. |
7. Cook the masala spice mix for about 3 minutes. |
8. Add the garlic and caramelise the onions. |
9. Stir in the cream and water. |
10. Add back the bacon and simmer for about 3-5 minutes. |
11. Add the chives. |
12. Add the parmesan cheese. |
13. Cook the pasta according to the package instructions. Add the cooked into the curry sauce and stir. |
14. Plate and Enjoy! :) |
