Pan-seared Pork Chops with Pomegranate Sauce
Ingredients:
2 pcs pork chops
Seeds of 1 pomegranate
1/4 cup chicken stock
1 tbsp sherry vinegar
1 tbsp soy sauce
2 tbsp butter
Salt & Pepper
2 tbsp olive oil
Mashed potatoes (optional)
Broccoli (optional)
Directions:
1. Whack the pomegranate to get the seeds out. |
2. Combine the pomegranate seeds, chicken stock, sherry vinegar and soy sauce in a small pot. Season with salt & pepper and cook for about 10-15 minutes to reduce. |
3. Add the butter and simmer for another 5 minutes. Taste and adjust seasoning as needed. Set aside and heat again later once the pork chops are ready. |
4. Season the pork chops with salt and pepper. |
5. Sear in a hot pan for about 3-5 minutes on each side since my chops are quite thin. |
6. Set aside once cooked. Let rest for about 5 minutes. |
7. Serve with the pomegranate sauce and your favourite side dishes. Plate and Enjoy! :) Above: Garlic-Parsley Mashed Potatoes and Steamed Broccoli |
