Oink Oink!: Sausage and Tomato Frittata


 Sausage and Tomato Frittata

Ingredients:

3 eggs
2 tbsp cream
1/4 cup cheese (grated)
1/4 cup fresh parsley (chopped)
2 tbsp olive oil
1 tbsp butter (cut in small pieces)
1 medium carrots (diced)
1/2 cup sausage or ham
1/4 cup cherry tomatoes (cut in half)
Salt and Pepper


Directions:

1. Preheat the oven.  Add half the cheese (above: parmesan and mozzarella), cream and some parsley to the eggs.  Season with salt & pepper.

2. Get ready to scramble! :)

3. Sauté the carrots for about 2 minutes.

4. Add the sausage (or ham).  Cook for about 2 more minutes.

5. Add some of the parsley and stir.  Add salt and pepper as needed.

6. Add the scrambled eggs.

7. Add the butter pieces.

8. Stir lightly and cook for about 2 minutes or until the bottom part of the eggs has started to set.

9. Top with the rest of the cheese and the tomatoes.  If your pan is oven-safe, you can place the entire pan in the oven and broil for about 3-5 minutes.  I had to transfer to a lightly greased aluminum foil.
10. Remove from the oven and add the rest of the parsley.

11. Let rest for about 5 minutes.

12. Plate and Enjoy! :)
Above: Pickled red cabbage, mustard, mayonnaise and ketchup on the side.
