Sausage and Tomato Frittata
Ingredients:
3 eggs
2 tbsp cream
1/4 cup cheese (grated)
1/4 cup fresh parsley (chopped)
2 tbsp olive oil
1 tbsp butter (cut in small pieces)
1 medium carrots (diced)
1/2 cup sausage or ham
1/4 cup cherry tomatoes (cut in half)
Salt and Pepper
Directions:
| 1. Preheat the oven. Add half the cheese (above: parmesan and mozzarella), cream and some parsley to the eggs. Season with salt & pepper. |
| 2. Get ready to scramble! :) |
| 3. Sauté the carrots for about 2 minutes. |
| 4. Add the sausage (or ham). Cook for about 2 more minutes. |
| 5. Add some of the parsley and stir. Add salt and pepper as needed. |
| 6. Add the scrambled eggs. |
| 7. Add the butter pieces. |
| 8. Stir lightly and cook for about 2 minutes or until the bottom part of the eggs has started to set. |
| 10. Remove from the oven and add the rest of the parsley. |
| 11. Let rest for about 5 minutes. |
| 12. Plate and Enjoy! :) Above: Pickled red cabbage, mustard, mayonnaise and ketchup on the side. |
