Sugar, Spice and Everything Nice: Oreo Chocolate Cheesecake


 Oreo Chocolate Cheesecake

Ingredients:
1 1/2 cups crushed Oreo cookies (about 24 Oreo pcs)
6 tbsp melted butter
1 1/2 cups whipping cream
2 tbsp milk
2 blocks chocolate cream cheese* (at room temperature)
1 tsp vanilla extract
1/2 cup sugar
White and Milk Chocolate chips (for topping)

* Or 2 blocks of regular cream cheese combined with 4 tbsp melted milk chocolate


Directions:
1. Pour the melted butter on the crushed Oreo cookies.  I prefer mine chunky :)

2. Mix until well-combined.

3. Pour into a springform pan and press down firmly.  Refrigerate for at least 30 minutes.  You can also use a normal baking tray with aluminum foil or cling film at the bottom so it would be easy to remove the cake once it has set.

4. Combine the whipping cream and milk.

5. Whisk until soft peaks form or once it has doubled in volume.

6. Combine the chocolate cream cheese, vanilla and sugar.

7. Whisk for about 2 minutes to dissolve the sugar.

8. Use a spatula to scrape the mixture around the bowl.

9. Add the whipped cream to the chocolate cream cheese mixture.

10. Fold the whipped cream.

11. Once well combined, cover with cling film and chill for about 30 minutes.

12. Pour the chocolate cream cheese on top of the Oreo crust.

13. Spread the chocolate cream cheese mixture.

14. Cover again with cling film and refrigerate for at least 4 hours to allow it to set.

15. After chilling, top with chocolate chips or fresh berries.

16. Unlock the springform pan.

17. Plate and Enjoy! :)
