Oink Oink!: Pork a la King


Pork a la King

Ingredients:
500 grams pork loin (or chicken)
1 tbsp olive oil
2 tbsp butter
1 pack baby carrots (optional)
1 medium onion (chopped)
3 cloves garlic (chopped/ sliced)
1 small pack (about 227 grams) of fresh button mushrooms (sliced)
3 tbsp pimiento
3 tbsp green peas
1 cup milk
1/2 cup cream
1 tbsp fresh chives (finely chopped)
1 tbsp fresh parsley (finely chopped)
1 tsp salt
1/2 tsp pepper


Directions:

1. Slice the pork into 1/2 inch pieces.  You can use pork loin, but I used pork fillet for this recipe.

2. Season with salt and pepper and let marinate for about 10 minutes.

3. Melt butter with the olive oil. 

4. Add the baby carrots and sauté for about 2 minutes.

5. Add the onions and cook until caramelised. 

6. Add the garlic and cook for about 2 minutes.

7. Add the mushrooms. 

8. Remove the carrots and set aside.  Cook the mushrooms for about 5 minutes.

9. Remove the mushrooms and set aside.  Cook the pork for about 6-8 minutes. 

10. Add the mushrooms back in the pan. 

11. Add the pimentos. 

12. Add the green peas and cook for about 2 minutes. 

13. Add the cream and milk. 

14. Add the fresh herbs.  Stir and taste.  Add some more salt and pepper as needed.

15. Simmer for 5 minutes.  

16. Serve over rice, pasta or toasted bread.  Plate and Enjoy! :)
