Pork a la King
Ingredients:
500 grams pork loin (or chicken)
1 tbsp olive oil
2 tbsp butter
1 pack baby carrots (optional)
1 medium onion (chopped)
3 cloves garlic (chopped/ sliced)
1 small pack (about 227 grams) of fresh button mushrooms (sliced)
3 tbsp pimiento
3 tbsp green peas
1 cup milk
1/2 cup cream
1 tbsp fresh chives (finely chopped)
1 tbsp fresh parsley (finely chopped)
1 tsp salt
1/2 tsp pepper
Directions:
| 1. Slice the pork into 1/2 inch pieces. You can use pork loin, but I used pork fillet for this recipe. |
| 2. Season with salt and pepper and let marinate for about 10 minutes. |
| 3. Melt butter with the olive oil. |
| 4. Add the baby carrots and sauté for about 2 minutes. |
| 5. Add the onions and cook until caramelised. |
| 6. Add the garlic and cook for about 2 minutes. |
| 7. Add the mushrooms. |
| 8. Remove the carrots and set aside. Cook the mushrooms for about 5 minutes. |
| 9. Remove the mushrooms and set aside. Cook the pork for about 6-8 minutes. |
| 10. Add the mushrooms back in the pan. |
| 11. Add the pimentos. |
| 12. Add the green peas and cook for about 2 minutes. |
| 13. Add the cream and milk. |
| 14. Add the fresh herbs. Stir and taste. Add some more salt and pepper as needed. |
| 15. Simmer for 5 minutes. |
| 16. Serve over rice, pasta or toasted bread. Plate and Enjoy! :) |
