Chunky Corned Beef Hash
Ingredients:
500g Corned Beef (cut into small pieces)
1 small onion (chopped)
1 tbsp garlic (minced)
1 1/2 cups grated potatoes
2 tbsp butter
Salt and Pepper
1 tsp fresh chives (finely chopped)
2 Poached eggs (optional)
Directions:
| 1. Sauté the beef in a pan at medium heat. You can cut into smaller finer pieces, but I made mine chunky. Sear for about 2 minutes. |
| 2. Add the onions and cook for a minute. |
| 3. Add the garlic and cook for another minute. |
| 4. Mix and add salt & pepper. |
| 5. Add the potatoes and cook for about 3 minutes. |
| 6. Taste and add more spices as needed. |
| 7. Stir in the butter. |
| 8. Press down firmly and cook for about 5 minutes to develop a nice "crust". |
| 9. Flip over and cook for about 5 more minutes. |
| 10. Top with poached eggs and chives. |
| 11. Plate and Enjoy! :) |
