Extra Rice, Please: Yang Chow Fried Rice

Yang Chow Fried Rice

Ingredients:

2 tbsp cooking oil
1 large carrot (chopped into small cubes)
3 tbsp fresh onion leaves (finely chopped)
3 tbsp fresh scallions (white part thinly sliced)
2 tbsp garlic (finely chopped)
1 chorizo/ Chinese Sausage (thinly sliced) or Char Siew pieces
4 pcs imitation crab (sliced into small pieces)
6-8 prawns (peeled and deveined)
3 tbsp frozen green peas (thaw before cooking)
2 large eggs (beaten)
2 cups cooked white rice (preferably cooked the day before)
1/2 tsp salt
1/4 tsp pepper


Directions:

1. Heat the cooking oil in a large pan and cook the carrots for about a minute.

2. Add half of the scallions and onion leaves.

3. Add the garlic and cook for another minute or until golden brown.

4. Add the chorizo or Chinese sausage slices and sauté for about 2 minutes.

5. Add the crab stick pieces.

6. Add the prawns.  Mix together and cook for about 4-5 minutes
(depending on the size of the prawns).

7. Add the green peas.

8. Move to the side of the pan and pour in the beaten eggs.
Let the eggs cook for about 30 seconds then stir everything together.

9. Remove the prawns and set aside to avoid overcooking them.
Add the rice.

10. Mix together and cook for about 5 minutes.  Season with salt and pepper.
Add the remaining scallions and onion leaves.



11. Plate and Enjoy! :)
