Bread Crumbs: Chipolata Sausage and Pimiento Puffs

Chipolata Sausage and Pimiento Puffs

Ingredients:

1 small onion (chopped)
1 tbsp garlic (minced)
1/4 cup capsicums (chopped)
Salt and Pepper
400g chipolata sausages
1/4 tsp cayenne pepper
2 tbsp red pesto or tomato sauce
Puff pastry (cut into your preferred size)
Cheese of your choice


Directions:

1. Pre-heat the oven at 180°C or 350°F.  Sauté the garlic and onions for about 2 minutes.

2. Add the capsicums and cook for about a minute.

3. Add the sausage.

4. Break apart into small pieces.

5. Season with salt and pepper and cayenne.  Stir.

6. Add the red pesto or tomato sauce.  Cook for about 10-15 minutes until the sausage is cooked.

7. Place the puff pastry on a lightly greased sheet tray lined with parchment paper.
I just bought puff pastry from the store and rolled 'em thinly.
Poke a few holes on the pastry to avoid too much puffing.

8. Place the filling on top of the pastry.

9. Top with some cheese.  I used white cheddar for the sausage filling.

10. Bake for about 20-25 minutes.  Let cool for about 5 minutes.
Plate and Enjoy! :)
