Oink Oink!: Pork Binagoongan


 Pork Binagoongan

Ingredients:

500g pork fillet or pork belly (cut into 1-1/2 inch pieces)
2 tbsp canola oil
1 medium onion (chopped)
2 tbsp garlic (minced)
1 large tomato (sliced)
3 tbsp shrimp paste
2 tbsp oyster sauce
2 tbsp vinegar
2 tbsp fresh onion leaves (chopped)
Salt and Pepper

Directions:

1. Marinate the pork in a little salt and pepper then sear in a heated pan with the oil.  Set aside.

2. Sauté the onions in the same pan until translucent.

3. Add the garlic and cook until golden brown.

4. Add back the pork and cook for about 3 minutes.

5. Add the shrimp paste.

6. Add the oyster sauce.  Cook for 2 minutes (Cook longer if using pork belly).

7. Pour in the vinegar.

8. Let simmer for about 2 minutes before stirring. 

9. Add the tomatoes and onion leaves.

10. Simmer until tomatoes are tender.

11. Serve with rice (above Nasi Biryani).
12. Plate and Enjoy! :)
