Pork Binagoongan
Ingredients:
500g pork fillet or pork belly (cut into 1-1/2 inch pieces)
2 tbsp canola oil
1 medium onion (chopped)
2 tbsp garlic (minced)
1 large tomato (sliced)
3 tbsp shrimp paste
2 tbsp oyster sauce
2 tbsp vinegar
2 tbsp fresh onion leaves (chopped)
Salt and Pepper
Directions:
| 1. Marinate the pork in a little salt and pepper then sear in a heated pan with the oil. Set aside. |
| 2. Sauté the onions in the same pan until translucent. |
| 3. Add the garlic and cook until golden brown. |
| 4. Add back the pork and cook for about 3 minutes. |
| 5. Add the shrimp paste. |
| 6. Add the oyster sauce. Cook for 2 minutes (Cook longer if using pork belly). |
| 7. Pour in the vinegar. |
| 8. Let simmer for about 2 minutes before stirring. |
| 9. Add the tomatoes and onion leaves. |
| 10. Simmer until tomatoes are tender. |
| 11. Serve with rice (above Nasi Biryani). |
| 12. Plate and Enjoy! :) |
