Bread Crumbs: Pimiento Eggs and Bacon Puffs


 Pimiento Eggs and Bacon Puffs

Ingredients:

Capsicums (finely chopped)
Scrambled eggs
3 tbsp cheddar cheese (grated)
Salt and Pepper
Puff pastry (cut in small squares and baked)
Bacon bits
Mayonnaise (optional)

Directions:

1. Cut your puff pastry (Store-bought should be fine) in about 2-inch squares.
Lightly brush with olive oil and bake for about 10-15 minutes or until golden brown.

2. I've cooked the bacon bits earlier and set it aside (see there peeking at the left corner).
Cook for about 1-2 minutes in the bacon fat.

3. Add the scrambled eggs.  Season with salt and pepper.  Add the cheese.  Set aside once cooked.
4. Assemble by topping the puff pastry with the scrambled eggs, mayonnaise and bacon bits.
Plate and Enjoy! :)
