Pimiento Eggs and Bacon Puffs
Ingredients:
Capsicums (finely chopped)
Scrambled eggs
3 tbsp cheddar cheese (grated)
Salt and Pepper
Puff pastry (cut in small squares and baked)
Bacon bits
Mayonnaise (optional)
Directions:
1. Cut your puff pastry (Store-bought should be fine) in about 2-inch squares. Lightly brush with olive oil and bake for about 10-15 minutes or until golden brown. |
2. I've cooked the bacon bits earlier and set it aside (see there peeking at the left corner). Cook for about 1-2 minutes in the bacon fat. |
3. Add the scrambled eggs. Season with salt and pepper. Add the cheese. Set aside once cooked. |
4. Assemble by topping the puff pastry with the scrambled eggs, mayonnaise and bacon bits. Plate and Enjoy! :) |
