Extra Rice, Please: Meaty Fried Rice


Meaty Fried Rice

Ingredients:

2 tbsp bacon bits
1/4 cup luncheon meat (diced)
1 Chinese sausage (sliced thinly)
1 small onion (chopped)
1/4 cup frozen green peas (thawed)
1/4 cup frozen corn (thawed)
2 eggs (scrambled)
2 tbsp fresh parsley (chopped)
Salt and Pepper
Garlic chips (optional)


Directions:

1. Sauté the bacon bits for about 2 minutes.  Add the luncheon meat and sausage.
Cook for about 2-3 minutes.

2. Add the onions and cook until translucent.

3. Move to one side of the pan and then pour in the scrambled egg.  Cook until eggs have set.

4. Mix together and cook for about a minute.

5. Add the parsley and rice then stir.  Season with salt and pepper.

6. Plate and Enjoy! :)
