Baked Rosti with Smoked Salmon and Fish Cakes
Ingredients:
Smoked Salmon
Sour Cream & Chives Sauce
2 tbsp mayonnaise
1/4 cup sour cream
2 tbsp fresh chives (finely chopped)
1/4 tsp cayenne
Salt and Pepper
Baked Rosti
2 cups grated potatoes
2 tbsp butter
1/4 tsp dried parsley
1/4 tsp dried rosemary
1/4 tsp smoked paprika
1/4 tsp cayenne
Salt and Pepper
Fish Cakes
1/4 cup capsicum (chopped in small cubes)
250 grams fish fillet (chopped in small pieces)
250 grams shrimps (chopped in small pieces)
3 tbsp fresh chives (finely chopped)
1/4 tsp dried basil
1/4 tsp dried parsley
1/4 tsp cayenne
1/4 tsp dried oregano
1/4 tsp ginger powder
Salt and Pepper
2 eggs
Juice of half a lemon
1/2 cup panko breadcrumbs
3 tbsp olive oil
Directions:
1. Preheat the oven to 180°C or 350°F. In a bowl, combine the mayonnaise, sour cream and parsley. Season with salt and pepper. |
2. Add the cayenne and stir. Set aside and keep chilled in the fridge. |
3. Bake or Boil the potatoes (Cook halfway only. The potatoes should still be a bit firm). Grate the potatoes preferably with a big grater. |
4. Add the butter. |
5. Add the spices and mix until well-combined. |
6. Place about 1 - 1 1/2 spoons of the potato mixture in a muffin tray. |
7. Press firmly and bake for about 20-25 minutes or until top is golden brown. |
8. Let cool and set aside. |
9. Cook the capsicums for about 1-2 minutes and set aside. |
10. Combine the fish, shrimps, spices and chives. Season with salt and pepper. Mix. |
11. Add the eggs, lemon juice and the cooked capsicums. |
12. Add the breadcrumbs and stir until well-combined. |
13. Do a test batch and adjust the seasoning as needed. As you can see, my first attempt failed :p I fixed the recipe already by adding 1 more egg and more breadcrumbs + more salt and pepper. |
14. Cook for about 3-4 minutes on each side. |
15. Look for that gorgeous brown colour. Once cooked, remove from the pan and set aside. |
17. Place the fish cake on top of the baked rosti. Top with the sour cream and chives sauce. Garnish with some chives. Plate and Enjoy! :) |
