Fish Escabeche
Ingredients:
2 tbsp canola oil
Fish of your choice
1 cup bell peppers (cut into strips)
1 small ginger (sliced thinly)
1 small onion (chopped)
2 tbsp garlic (minced)
Salt and Pepper
2 tbsp fresh parsley (finely chopped)
For the Sweet and Sour Sauce:
3 tbsp tomato ketchup
2 tbsp oyster sauce
1 tbsp sriracha
2 tbsp soy sauce
2 tbsp vinegar
2 tbsp mirin
Directions:
| 1. Mix together the ingredients for the sweet and sour sauce. |
| 2. Season the fish with salt and pepper. Fry and set aside. |
| 3. In the same pan, sauté the ginger for a couple of minutes. |
| 4. Add the bell peppers. Cook for about a minute. |
| 5. Add the onions and cook until translucent. |
| 6. Add the garlic. |
| 7. Cook for another 2 minutes. |
| 8. Add the sweet and sour sauce. |
| 9. Simmer for about 5 minutes. |
| 10. Taste and adjust seasoning as needed. Stir in the parsley and the fish. |
| 11. Plate and Enjoy! :) |
