Fish Be With You: Fish Escabeche


 Fish Escabeche

Ingredients:

2 tbsp canola oil
Fish of your choice
1 cup bell peppers (cut into strips)
1 small ginger (sliced thinly)
1 small onion (chopped)
2 tbsp garlic (minced)
Salt and Pepper
2 tbsp fresh parsley (finely chopped)

For the Sweet and Sour Sauce:
3 tbsp tomato ketchup
2 tbsp oyster sauce
1 tbsp sriracha
2 tbsp soy sauce
2 tbsp vinegar
2 tbsp mirin

Directions:

1. Mix together the ingredients for the sweet and sour sauce.

2. Season the fish with salt and pepper.  Fry and set aside. 

3. In the same pan, sauté the ginger for a couple of minutes.

4. Add the bell peppers.  Cook for about a minute.

5. Add the onions and cook until translucent.

6. Add the garlic.

7. Cook for another 2 minutes.

8. Add the sweet and sour sauce.

9. Simmer for about 5 minutes.

10. Taste and adjust seasoning as needed.  Stir in the parsley and the fish.

11. Plate and Enjoy! :)
