Garlic, Meat and Veggie Frittata
Ingredients:
2 tbsp olive oil
3 eggs (scrambled)
1/4 cup cherry tomatoes (cut in half)
100 grams pork (minced and pre-cooked)
1 tbsp fresh parsley (chopped)
1 tbsp fresh onion leaves (chopped)
2 tbsp corn
2 tbsp green capsicum (finely chopped)
1 tbsp garlic (minced)
1/4 cup cheese (grated)
Directions:
| 1. Combine the eggs and the rest of the ingredients (except the oil and garlic). Season with salt and pepper. |
| 2. Sauté the garlic in the oil until golden brown. |
| 3. Add the egg mixture. |
| 4. Cook for about 4 minutes in medium heat until the egg is mostly set. |
| 5. Cover and lower the heat. Cook for about 5 minutes. |
| 6. Let rest for a few minutes before slicing. |
| 7. Plate and Enjoy! :) |
