Oink Oink!: Garlic, Meat and Veggie Frittata

Garlic, Meat and Veggie Frittata

Ingredients:

2 tbsp olive oil
3 eggs (scrambled)
1/4 cup cherry tomatoes (cut in half)
100 grams pork (minced and pre-cooked)
1 tbsp fresh parsley (chopped)
1 tbsp fresh onion leaves (chopped)
2 tbsp corn
2 tbsp green capsicum (finely chopped)
1 tbsp garlic (minced)
1/4 cup cheese (grated)


Directions:

1. Combine the eggs and the rest of the ingredients (except the oil and garlic).  Season with salt and pepper.

2. Sauté the garlic in the oil until golden brown.

3. Add the egg mixture.

4. Cook for about 4 minutes in medium heat until the egg is mostly set.

5. Cover and lower the heat.  Cook for about 5 minutes.

6. Let rest for a few minutes before slicing.

7. Plate and Enjoy! :)
