Ginisang Upo
Ingredients:
1/2 cup shrimp
1/2 cup scallops
Juice of 1 lime
1/4 tsp chilli pepper flakes
Salt and Pepper
2 tbsp canola oil
1 medium onion (chopped)
1 tbsp garlic (minced)
1 tbsp fresh onion leaves (chopped)
1 Upo or Green Marrow (cut into cubes)
1 medium tomato (sliced)
1/2 cup chicken stock
Directions:
| 1. Marinate the seafood in lime juice, salt, pepper and chilli flakes for a few minutes. |
| 2. Sauté the seafood and set aside. |
| 3. Cook the onions until translucent. |
| 4. Add the garlic and cook until golden brown. |
| 5. Add the onion leaves. |
| 6. Add the veggies and cook for about 3 minutes. |
| 7. Season with salt and pepper. |
| 8. Add 1/2 cup of chicken stock. |
| 9. Add the tomatoes and simmer for another 5 minutes or until the veggies are tender. Taste and adjust seasoning as needed. |
| 10. Top with the seafood. Plate and Enjoy! :) I packed this one to-go to feed a few of my friends :) |
