Roots and Veggies: Ginisang Upo

Ginisang Upo

Ingredients:

1/2 cup shrimp
1/2 cup scallops
Juice of 1 lime
1/4 tsp chilli pepper flakes
Salt and Pepper
2 tbsp canola oil
1 medium onion (chopped)
1 tbsp garlic (minced)
1 tbsp fresh onion leaves (chopped)
1 Upo or Green Marrow (cut into cubes)
1 medium tomato (sliced)
1/2 cup chicken stock


Directions:

1. Marinate the seafood in lime juice, salt, pepper and chilli flakes for  a few minutes.

2. Sauté the seafood and set aside.

3. Cook the onions until translucent.

4. Add the garlic and cook until golden brown.

5. Add the onion leaves.

6. Add the veggies and cook for about 3 minutes.

7. Season with salt and pepper.

8. Add 1/2 cup of chicken stock.

9. Add the tomatoes and simmer for another 5 minutes or until the veggies are tender.  Taste and adjust seasoning as needed.

10.  Top with the seafood.  Plate and Enjoy! :)
I packed this one to-go to feed  a few of my friends :)
