Rib-eye with Parsnip Purée and Radish Salad
Ingredients:
1-2 pcs Rib-eye (Seasoned with Salt and Pepper and Pan-roasted for about 3 minutes on each side)
Parsnip Purée
2 parsnips (cut in cubes and boiled until tender)
2 tbsp butter
2 tbsp cream
1/4 tsp paprika
1/2 tsp dried parsley
Salt and Pepper
Radish Salad
1 small cucumber (cut into thin rounds)
6-8 pcs red radishes (cut into thin rounds)
1/4 cup radish sprouts
2 tbsp balsamic vinegar
1/4 tsp sugar
Salt and Pepper
Directions:
1. Add the butter to the cooked parnsip while it is still hot. Mash with a masher or fork. |
2. Add the cream, paprika, salt and pepper |
3. Purée using a normal or hand blender. |
4. Add the parsley. Taste and adjust the seasoning. |
5. Mix the salad ingredients together when ready to eat. |
6. Plate and Enjoy! :) |
