Cluck Cluck: Chicken Afritada

Chicken Afritada


Ingredients:

500 grams chicken (cut into 1 inch pieces)
2 medium carrots (cut in 1 inch pieces)
2 potatoes (cut in 1 inch pieces)
1 medium onion (chopped)
1 tsp garlic (minced)
1 small green bell pepper (chopped)
1 tbsp liver spread (optional)
250 grams tomato sauce
2 tbsp tomato paste
1 cup water
1/4 cup green peas
Salt and Pepper


Directions:

1. Sear the chicken for about 5 minutes then set aside.

2. Sauté onions, garlic and then add the potatoes and carrots.  Cook for about 5 minutes.

3. Add the bell peppers and cook for about 3-5 minutes.

4. Add back the chicken.  Pour in the water and add the liver spread and tomato sauce.
Season with salt and pepper.  Cook for about 10-15 minutes.

5. Add the green peas.

6. Taste and adjust seasoning as needed.  Simmer until potatoes and carrots are tender.

7. Serve over rice.  Plate and Enjoy! :)
